It’s a new year of salvation.
I spent a rather quiet New Year’s Day, after morning Mass. But I developed a craving for some Roman comfort food. Nothing but oxtails would do. Happily, a quick trip to the shops obtained the main ingredient.
Season - Oxtails - Inches
Season well and brown the oxtails. I like them cut at least 2 inches thick.
Pancetta and the usual soffrito.
Consultation - Great - Roman™ - Time - Wine
On consultation with The Great Roman™ the last time I made this, I used white wine to deglaze and add cooking volume.
Then, of course, put the oxtails in.
After some hours, simmering...
